Salmon Caesar with Pesto Butter

In the winter all my salads need to have a warm component or I don’t want one. Here’s one way I warmed up a Caesar!

Preheat oven to 400.

  1. Mash a few tablespoons of pesto with a few tablespoons of softened butter and a minced clove of garlic. Set to the side.

  2. Salt and pepper the salmon on both sides. Squeeze half of a lemon all over the salmon.

  3. Dollop the pesto butter over the salmon and place in the oven for about 10 minutes - check for level of desired done-ness.

  4. Place on top of a bed of romaine tossed with Caesar dressing, more lemon juice, lots of Parmesan and pepper.

  5. Spoon the melted lemon butter pesto left in the pan over top to finish.
