Avocado with Lime and Stovetop Tomatoes.

I really miss California avocados. There was such a variety and I could do things like this just to get rid of them.

My British classmate sent me this recipe when I said I had too many avocados and it was delicious. You scour the avocados top with lime and put them face down on the pan, heat up some tomatoes on the stove and pour them over when they’ve burst. Delicious!

Sometimes the avocadoes were so good you didn’t really need to do anything at all! Olive oil, lemon and a little salt and pepper are all you need when an avocado is REALLY right :).
